Peppermint Cookies

Yum! These cookies are perfect to make with little ones- have very few ingredients, simple to roll out (no waiting for the dough to cool), and bake in no time. Love the subtle mint flavor. The cookies taste best accompanied with a mug of hot chocolate.

Ingredients

1 cup whipping cream / heavy cream
1 cup sugar
1 egg
2 tsp baking powder
2 tsp. peppermint extract
3 cups flour


Cream together the heavy cream (DO NOT WHIP THE CREAM, JUST ADD IN LIQUID FORM), sugar and egg.
Add baking powder, peppermint extract and flour.
Mix together into a soft dough and roll out and use small cookie cutters.
Bake at 350 degrees for 10 minutes or until bottoms are lightly brown.
Ice and dust with coconut, crushed candy cane....whatever you like!

Too funny...I just made those cookies this morning. Much easier than the candy cane cookies I usually make. It was nice seeing you yesterday, stranger :)
